Perfect for a mid-week meal this roasted chicken with potatoes and asparagus is short on prep time and long on flavor. These potatoes are made tasty with the addition of a few cloves of garlic and if you want extra pizzazz add some fresh chopped rosemary. If you don't have two roasting pans, a cookie sheet will work just as well for the asparagus and potatoes.
Since the entrée is an all-in-one meal, simply serve an iced lemon drink as a special beverage before or during the meal. If you can get Meyer lemons use them for a nice sweet, tangy flavor. When zesting the lemons make sure to use only the yellow skin, the white pith will cause a bitter flavor.
Wow everyone with a chocolate almond strudel for dessert. If you're short on time, serve it without the chocolate sauce, or just make the sauce and serve it with vanilla ice cream.
